Award-Winning Hotels New Mediterranean Dining Concept Will Delight Guests with its Sparkle on October 28th.
GRAND-CUL-DE SAC, ST. BARTHS (October 1st, 2021) – Award-winning luxury boutique Le Barthélemy Hotel & Spa announces its new open-air dining concept, Amis St. Barth, blending the carefree Caribbean and its signature French chic in a spectacular seaside setting on the secluded Grand Cul de Sac bay. Led by master French Chef Vincent Gomis and Sous-chefs Marie Cécile Gomis-Alexandre, his wife, and Mathieu Oysselet, Amis’ menu infuses the flavors of the South of France and Mediterranean with fresh local ingredients, featuring live entertainment and special experience tables for a tailor-made dining experience. Amis aims to evoke and amplify the best of friendships and conversations that sparkle, mixing comfort and familiarity with sophisticated elegance. Amis will open its doors on October 28th as Le Barthélemy reopens for the winter season and is now accepting reservations.

Expertly Designed:
Designed by revered Parisian designer Michael Malapert, Amis’ design is influenced by the Mediterranean and Provence coast, utilizing natural materials such as rattan, terracotta, wood and stone throughout the space. Amis brings elements of the sea to its décor with its focal hanging blue glass sculpture in the center of the space, depicting a school of fish swimming together as one.
Amis is outfitted with a variety of seating options including cozy sofas and armchairs covered in fabrics featuring Le Barthélemy’s signature blue and white colors, and vegetation is used to fuse land and sea. Guests can snap a photo to remember their evening at a photo wall including its signature “Sparkling starts here” motto, or in front of the uninterrupted ocean view. The open-air Amis eliminates interior and exterior lines, creating unity that invites the ocean in from all angles.
Amis’ Esteemed Culinary Team
Amis culinary operations are spearheaded by the immensely talented Chef Vincent Gomis. Raised by a family of chefs in the Auvergne-Rhône-Alpes region of France, Gomis followed his passions to the hilltop French culinary town of Carcassonne at the young age of 15, where he worked alongside the esteemed Meilleur Ouvrier de France, Franck Putelat, and his team obtained two Michelin-stars.
After six years, he seized the opportunity to work at Paris’ most revered restaurant, Epicure at Le Bristol, alongside triple Michelin starred French Chef, Eric Fréchon.
His time at Le Bristol turned into a love affair for French cooking, but it’s also where he met the love of his life and now, Sous-chef, Marie Cécile.
The couple spent three years at Le Bristol mastering their craft before arriving on the gastronomic island of St. Bart’s.
Marie Cécile brought her masterful skills to St. Bart’s for a season with Chef Fréchon before reuniting with Chef Gomis at Le Barthélemy in the Amis kitchen.
In addition to Sous-chef Marie Cécile, Chef Gomis will be supported by Sous-chef Matthieu Oysellet, who worked alongside Michelin starred Chef Eric Provost and later Michelin starred Chef Julien Hennote in France before coming to the island.
The creative and charismatic culinary team bring their passion for food to Amis blending their experiences from Carcassonne, Courchevel, Dinard, Deauville, Cannes and Paris with the flavors of the Mediterranean and spices of Lebanon, Maghreb and Spain.
Special Experience Tables:
Amis St. Barths’ dining experiences sparkle with possibility, offering special experience tables for every occasion and atmosphere from romance to fun evenings with family and friends.
Ideal for a celebration, guests can dine under the stars with a private pergola set up and create their own Champagne cocktail with the bartender to pair with an exclusive menu when booking the Sparkling Table.
For privacy and bit of mystery, couples and small groups can book the Chef’s Table inside the kitchen for a surprise meal or escape to the beach with a Love St. B’Heart Table, complete with rose petals, a sea breeze and a tailormade menu.
Sophisticated Mediterranean Cuisine:
Featuring a menu designed to stir the senses and blend nostalgic and comforting flavors, Amis will serve a variety of dishes cooked with the freshest natural and local ingredients.
At the bar, guests can select from a variety of Grand Cru wines poured by the glass or opt for a botanic cocktail served in fun bird-shaped glassware with ice cube balls; fresh herbs and edible scented hydrolats.
Menu highlights include seafood dishes such as grilled octopus with chickpea salad & fresh herbs; cod poached in coconut milk with grilled sweet potato and curry sauce with exotic fruits; seared tuna with coriander mayonnaise, marinated eggplant & fragrant rice; and lobster ravioli with carrot and ginger purée and curry butter.
Other menu standouts include duck breast with jerk spices, mango chutney and sweet potato fries; lamb loin with green olive tapenade and eggplant caviar; and broccoli pesto pasta with lemon confit and pistachio broccolini.
The Amis team will present a cheese trolley to all guests explaining the stories behind the variety of delicacies offered, as well as an assortment of desserts including a delicious spicy roasted pineapple éclair and chocolate & peanut puff pie.
